Nestled in the heart of Telemark, Dalen Hotel is a fairytale destination dating back to 1894. Built in the distinctive Norwegian Dragon Style, the hotel features 49 individually designed rooms, a grand hall, historic lounges, a fine dining restaurant, and lush gardens. Our award-winning hotel is renowned for its timeless charm, offering a unique experience to every guest.

About the Role 

As Pastry Chef, you will be responsible for developing and executing the hotel’s dessert and pastry offerings — including elegant desserts for our set menus, fresh pastries for afternoon tea, baked goods for breakfast, and seasonal specialties. You will work closely with the Executive Chef and contribute to the overall culinary vision of Restaurant Bandak.

Restaurant Bandak is a gourmet establishment with high ambitions, where classic French cuisine is crafted using local products from Telemark and Norway. Guests can enjoy our signature afternoon tea in the salons, breakfast with à la carte options, and curated tasting menus for dinner in the historic dining room.

Key Responsibilities:

  • Plan, prepare, and present desserts, pastries, and baked goods to the highest standards.
  • Contribute creative ideas for seasonal menus and themed experiences such as afternoon tea.
  • Oversee pastry section operations, including mise en place, baking, and plating.
  • Ensure consistency in quality, taste, and presentation.
  • Maintain cleanliness and hygiene of the pastry kitchen, following food safety standards.

Who You Are:

  • Proven experience as a Chef de Partie or in a similar role.
  • Proven experience as a Pastry Chef or in a similar role, ideally in fine dining.
  • Strong knowledge of pastry techniques, baking, and plated desserts.
  • Creativity and a passion for aesthetics and detail.
  • Organized, reliable, and able to work under pressure.
  • A team player with great communication skills.
  • English proficiency is essential.
