In 1837, Hôtel du Nord opened its doors as Trondheim's first hotel — a place where meals, conversations and hospitality stood at the centre. When Villa Nord opens at Dronningens gate 26 in 2026, we carry that story forward, with a clear eye on what comes next.

About Villa Nord

Villa Nord will be Trondheim's first boutique hotel, with 51 individually curated rooms, a restaurant, wine bar, café and intimate meeting spaces. The hotel is rooted in the city's history, yet designed for the modern traveller seeking stillness, quality and authentic experiences.

Villa Nord is not a traditional hotel. It is a place shaped by history, people and quiet precision.

Our gastronomy reflects the same: local produce. Seasonal menus. Precision without rigidity. Meals that invite guests to linger a little longer.

Villa Nord is owned by Villa Nord AS, wholly owned by Hoff Hotels AS (Realinvest AS).

We are now looking for a Pastry Chef who will shape the sweet and baked identity of Villa Nord — with a deep respect for craft, seasonality and the quiet art of making something truly memorable.

This is a role for someone who understands that pastry is not an afterthought. It is a statement.

About the Role

As Pastry Chef, you have full creative and operational responsibility for Villa Nord's pastry and baked goods programme — spanning the breakfast experience, restaurant desserts, afternoon offerings, celebration cakes and everything in between.

You bring technical mastery and an artistic sensibility, but you are equally grounded in the day-to-day rhythm of a working kitchen. You build your section with care, lead by example and take pride in every element that leaves your hands.

You will work closely with the Culinary Head Chef to ensure that the pastry programme is seamlessly woven into the overall culinary identity of Villa Nord — coherent, seasonal and always of the highest quality.

Your Responsibilities

  • Develop and execute Villa Nord's full pastry and baked goods offering across all service occasions
  • Create dessert menus and pastry selections that are seasonal, produce-led and reflective of the hotel's identity
  • Lead and develop the pastry section, fostering a culture of precision, creativity and calm
  • Oversee all breakfast baked goods, afternoon tea elements and special occasion pastry work
  • Collaborate with the Culinary Head Chef on menu cohesion and culinary storytelling
  • Manage section operations including ordering, waste reduction, cost control and food safety
  • Contribute to Villa Nord's positioning as a destination for genuine, craft-led food experiences

You have deep pastry expertise and a distinct point of view. Equally important: you are a grounded, collaborative presence in the kitchen.

  • Have solid experience from quality restaurants, boutique hotels, patisseries or similar environments
  • Bring both technical rigour and genuine creativity to your work
  • Value seasonal ingredients, local producers and responsible sourcing
  • Lead your section with calm authority and a genuine investment in those around you
  • Take pride in the full arc of your work — from the first lamination to the final plate
  • Understand that great pastry is part of a larger story, not a separate chapter
